Paleo (Grain-Free) Lemon Poppy Seed Muffins
- 2 cups of almond meal
- 1 tsp of baking soda
- sprinkle of salt
- 2 eggs
- 1/3 cup of melted organic vegetable shortening
- 1/3 cup of coconut sugar
- 3 tbsp of poppy seeds
- zest of 1 whole lemon
- 1 tbsp of vanilla extract
Mix wet and dry ingredients separately. Combine the ingredients and pour onto a greased muffin pan. Bake at 350 degrees for 15 minutes.
